The text in the "Configuring MOM6 diagnostics" section of the "Run ACCESS-OM3" documentation describes an old process that we no longer follow (since ACCESS-NRI/access-om3-configs#959). There no longer is a diagnostic_profiles subdirectory. Instead the diag_table and diag_table_source.yaml file are in the base directory of the config.
