feat(icons): use VARIABLE (x) icon from gallery for .formula/.fx files

Replaces the previous inner symbol with the exact (x) variable icon from
the gallery — curved parentheses flanking a crossed x, matching the
math/programming variable convention and Airtable's {FieldName} syntax.
