Update responses b7 release date to 2026-05-25

Description

This PR is a follow-up to #47076 and updates the release metadata for azure-ai-agentserver-responses 1.0.0b7.

Changes included:

• Updates the 1.0.0b7 CHANGELOG date to 2026-05-25 to reflect the current release date.
• Keeps package version as 1.0.0b7 (validated as a valid PEP 440 prerelease version).

No SDK regeneration from a new API spec is included in this PR.
