Add MiMo-V2.5-ASR support to mlx-audio STT.
Scope:
- detect MiMo checkpoints from config or repo name
- load
mlx-community/MiMo-V2.5-ASR-MLX
- resolve
mlx-community/MiMo-Audio-Tokenizer from mlx_manifest.json
- document the model in the STT docs
