How can I ensure that when creating or updating products, the price is written in the gross price field and not in the net price field?

Second question: how can I access the physical inventory? With stock_aviaple I only get the available stock?

In PrestaShop, the product price is always saved without tax.

Regarding inventory, you can get the available stock using the stock_available resource
