Remove/update uses of `transform_to_real` from documentation

Issue

#404 removes the API of transform_to_real in predict, replacing it with more transparent keyword arguments, and the ability to remove the obs_noise_cov from predicted covariances
This is resolved in the source code and tests, but not in
