docs(Echo): Improve README formatting and add park emoji

Clean up extraneous HTML tag spacing in the header table and add the 🏞️ park emoji to the "Echo in the Land Ecosystem" section header for visual consistency with Land's branding.

Minor documentation improvements to maintain README quality.
