Swap the defaults values of enabled

Currently, the default is enabled=True for many things, in particular dependencies like mysql, OpenSearch, etc. This is convenient for the demo, but we should rather aim at having sensible defaults for prod.

Do not forget to reflect the changes in all the values.yaml (CI, run_demo, etc) and in the helm legacy command

• make the values.yaml consistent, see which sections should be enabled or not (the ones needed for run_demo.sh could move the values.tpl.yaml, which is specifically targeting the run_demo.sh
