Reclass the 12.1 line as v5.0.0 (12.1-only)

The 12.1 aura-system rework (factory, blocked-overlay, ports) is a major,
backwards-incompatible change, so:
  - Version base moves from v4.8.0 to v5.0.0.
  - Interface set to 12.1 only (120100) — this build no longer loads on
    12.0.x; those users stay on the v4.7.0 stable line.
