Update _index.md for Configure Monitors doc (#35786)

Slight typo - in the "Preview graphs" section -> table -> "Evaluated Data" tab -> updated "Evaluation Data graph" to "Evaluated Data graph" in the text.

This is more consistent with the rest of this doc & the platform UI.
