What does this PR do? What is the motivation?
We recently addressed some Log Explorer papercuts. We added the ability to drag-and-drop columns, and added some new Display options to the List view. While writing up the Feature Announcement and Release Notes draft, we wanted to point to the docs, and I noticed that the documentation shows the older view for Options and mentions "number of lines" which is now outdated.
I've updated the sentence mentioning the Options for the Log Explorer list view visualization. Options no longer has "number of lines" and instead has "height" and new "display" options.
I also updated the demo path video. I kept the same demo path as before, but with the latest from the Demo environment stack today, and showing the drag-and-drop column ability and updated Options menu.
I did not update the other language pages, as per the instructions on https://github.com/DataDog/documentation/blob/94fc831497969a6581489555c5aa8e5faacaf478/CONTRIBUTING.md

These papercut fix updates should already be in production, but we're trying to update the docs and then will publish the release note and send out the feature announcement hopefully soon.
