[DOCS-14667] Add UK1 region to amazon_app_mesh and ecs_fargate

What does this PR do? What is the motivation?

Fixes DOCS-14667

Adds UK1 (uk1.datadoghq.com, AWS eu-west-2) region support to two integration README files:

• amazon_app_mesh: Add uk1 to 3 existing combine blocks
• ecs_fargate: Add uk1 to 7 combine blocks and add two new uk1 FireLens log configuration blocks (apikey and secretOptions variants)
