docs: migrate OSS asset-modelling pages to v3 Asset/Organization terminology + refresh screenshots (#15113)

Update the open-source asset-modelling documentation for DefectDojo 3.0's
renamed object model (Product Type -> Organization, Product -> Asset) and
refresh the accompanying screenshots against the 3.0 UI.

- Organizations: rename OS_producttype.md -> OS__organizations.md with
  Organizations content (Organizations vs Assets guidance, boundaries, RBAC)
- Asset Hierarchy & Source Code Repositories: Asset nomenclature + image
  renames (product-* -> asset-*)
- Tagging Objects: reshoot all 7 screenshots and migrate prose
  (Product Type -> Organizations, Product -> Asset, Tags (Product) -> Tags (Asset))
- Asset Health Grade: add a screenshot showing grades in the Asset List
- Image set: add organization_ss1.png and asset-health-grade.png,
  drop PT_ss2.png, refresh Asset_Hierarchy_Overview, dashboard, asset_ss3/ss5
