Production deployment of codec-enabled pipeline

Description:
After staging validation, deploy the codec-enabled pipeline to production. Only new items will be processed with the codec (no migration of existing items).

Tasks:

• Update production Argo workflow to use the new Docker image
• Process new items with codec-enabled converter
• Monitor STAC metadata and visualization for issues
• Verify new items coexist correctly with older non-codec items in the same collection
