Update Docker compose examples

The Docker compose examples are outdated. They need to be cleaned up and should be updated according to the latest best-practices.

Re-use examples from FAIRDataTeam/compose.

The current "latest" docs (as seen on https://docs.fairdatapoint.org/en/latest/deployment/local-deployment.html#local-deployment) still refer to 1.16 and mongo 4. What is the expected timeline for updating the readthedocs?

Hi @kburger it's still high on the list of priorities. I'm hoping to finish it this year at least.
In the meantime, you could have a look at the develop branch in the docs.
