Bump @sentry/profiling-node from 1.2.6 to 10.39.0 (#6719)
Very large major bump (1 → 10). Currently in the 2.30 milestone (moved from 2.29).

- Sentry quota exhausted — spans, transactions, and replays are being dropped with "quota or internal rate limit reached". Frontend integration has been confirmed via payload inspection, but steps 7, 8, and backend tracing cannot be verified in the Sentry UI until the quota resets at the start of the next billing period.
Notes: Dependabot can no longer rebase this PR because it's been edited by a non-bot; @dependabot recreate reported it was already up-to-date. Re-test and merge once #7017 lands and the Sentry quota resets.
