As was listed in the changelog notes for 7.0.0-rc1, there is an ongoing issue with Steam removing the added 'Play Mod Organizer' launch option after a restart of the launcher. This is being looked into and this issue is being opened to keep track of the progress.
For now, if you run into this issue, please run mo2-lint update <path/to/mo2/folder> to readd the launch option.
