ci: add Sylius 2.2 to matrix

Summary

• Extend the CI matrix to also test against Sylius 2.2 (with Symfony 7.4).
• Sylius 2.1 + Symfony 7.3 stays as the reference (passes).
• Sylius 2.2 + Symfony 7.4 will be red until the Gedmo Loggable object union fix is released (Gedmo PR #3046, tracked in deps: switch symfony/ai-* from stable workarounds when upstream fixes are released #17). The red signal here is intentional - it makes the upstream blocker visible.

Test plan

• Sylius 2.1 + Symfony 7.3 still green (unchanged from current main)
• Sylius 2.2 + Symfony 7.4 red on the same Gedmo issue we've documented
