Summary

Currently dependency on Airflow 2 - we should be looking to upgrade to 3.

It may be beneficial to do a blue/green strategy for this, migrating DAGS individually to allow for continuous deployment.

Acceptance Criteria

• Airflow dependency is upgraded
• Existing functionality is preserved
• Upgrade process for deployment is clear / updated
• Tests pass.
• Documentation added.
