Remove dead docs/examples/ duplicate

The compose examples used to live in both docs/examples/ and
assets/examples/. Only the assets/ copy is referenced from the
docs (via {% file src=/assets/examples/... %}); the docs/ copy
was an unused leftover from before that move.
