COMP: Upgrade pixi.lock from v6 to v7 format

Regenerated via 'pixi lock' on a pixi 0.68 binary, which now emits
a deprecation warning on every CI run when it reads the v6 format.
Pixi re-solves with locked content (no package version changes), so
this is a format-only upgrade.
