Control the column types when reading internal table files in `KhiopsCoclustering` and `KhiopsEncoder`

#### Description
We did this for `KhiopsClassifier` and `KhiopsRegressor` in PR #314 . This was critical for `KhiopsClassifier` and to finish PR #306.

#### Questions/Ideas
- Why is more complex:
  - Because we need to read first the encoding dictionary to know the output types of the columns.
