fix(homeassistant): mark device settings as config

Summary

• mark cover calibration/direction exposes such as set_limits, motor_direction, tilt_mode, calibration_*, and motor_reversal_* as Home Assistant config entities
• mark device tuning exposes for display comfort settings, radar range/sensitivity/timing, plant sensor calibration/sampling/warning thresholds, temperature unit, and schedule text as Home Assistant config entities
• add a regression test for these device-setting discovery mappings

• Manhot MB60L-ZG-ZT-TY cover modules
• Girier TS130F_GIRIER_DUAL dual cover modules
• Xiaomi LYWSD03MMC-z temperature/humidity sensors
• Wenzhi WZ-M100 radar sensors
• Tuya ZG-205Z/A radar sensors
• COOLO CS-201Z plant/soil sensors
• Aqara SRTS-A01 thermostats
