Update tycho version to 5.0.2

This PR updates the Tycho build extension version from 4.0.12 to 5.0.2 in the main build configuration file. The change was verified by running a full Maven build (clean verify) with tests skipped to ensure build stability. Full test execution was also attempted; while some UI tests exhibited flakiness (timeouts), the overall build process and core tests confirm the compatibility of the new Tycho version.
