fix: add pytest to requirements.txt for recipes missing it

The pytorch:26.04-py3 base image no longer ships pytest pre-installed.
This adds pytest to all requirements.txt files that were relying on
the base image providing it, fixing 'pytest: command not found' CI
failures.
