[Java/native] use node.asString() when using Jackson 3 & update to 3.1.1

• use node.asString() instead of node.asText() when using Jackson 3 (due to deprecation)
• fixes [BUG] node.asText() is deprecated in Jackson3 #23506
• bump Jackson version from 3.1.0 to 3.1.1
