Summary

• Bumps openapi-to-postmanv2 from ^5.0.0 to ^6.0.0
• SchemaPack API is unchanged — no code changes required
• Build verified clean with yarn build-packages

Motivation

Part of ongoing effort to reduce flagged dependency versions (issue #1320). Both v5 and v6 use ajv ^8.11.0, so this does not change the ajv version, but keeps the dependency current.

Test plan

• yarn build-packages passes with no TypeScript errors
• Verify postman collection generation still works in the demo app
