[DEV] pixi docs-watch does not call docs-clean

I wanted to use pixi run docs-watch when fixing the documentation in #2704, but now realise that it doesn't call docs-clean, so it throws errors about already-existing parquet-files.

@VeckoTheGecko, can you help by fixing the pixi.toml?
