chore(deps): update pinia to 2.3.x and fix type definitions

- Update pinia from ^2.0.34 to ^2.3.1
- Update happy-dom from ^17.4.4 to ^20.0.2
- Update vite-plugin-static-copy from ^0.16.0 to ^0.17.1
- Fix LabelsStore and AnnotationToolStore type definitions to work with
  Pinia 2.3+ type inference changes for setup stores
- Use types instead of interfaces per project preference
