Add support for more HK Datatypes

• Add support for more Apple Healthkit data types that aren't currently supported in the capacitor plugin
• This can be done by forking/extending the plugin
• Some interesting data types to add: https://developer.apple.com/documentation/healthkit/data-types#Mobility
