Gallery Using A Single Custom Image Size Showing Various Sizes And Dimensions

I use Simple Image Sizes in on all my sites that require galleries. In this case, excuse the content but my client is an escort agency. I want all the images on a gallery page to be exactly the same size and shape. At the moment there are long thin shots and short rectangular shots displayed that were uploaded my admins so this is not working as I thought.

I’ve set up a custom image size for portrait oriented shots and set dimensions to 684 x 1024 and crop set to centre, centre. The image that shows in the gallery is the one set as the featured image for each girl post but in Elementor my page builder, the gallery is set to use my custom image size so as I’ve set the crop for centre, centre and fixed the size, shouldn’t all the images be exactly the same dimensions.

This issue is probably caused by my own lack of knowledge but can anyone help please?

I think I've just realised that the dimensions are 'Maximum Size' so if I upload images that exceed the maximum dimensions, cropping will work, but if if one of the dimensions is less, then this set up won't force the uploaded image to be the exact dimensions. Is there a way to set things up so that a ratio is forced by cropping, so regardless of size, every image will be the same shape? I could do that by making the max height and width tiny but that would defeat the object of image quality. Any ideas?
