Use explicit ruby_event_store path in active_record Gemfiles to fix bundler 4.x conflict

Bundler 4.x is stricter about gems found in multiple path sources.
Using path: ".." (monorepo root) caused rails_event_store_active_record
to be discovered both from the gemspec at "." and via the broad path
source — replacing with explicit path: "../ruby_event_store".
