Okay, my understanding was we run most CI in this project on the primary Linux platform (so currently Noble), but yeah, only the Python and CMake-installed examples use macOS, so probably we don't care whether it's the newer or older drake-supported macOS version?

Now, with that said, the CMake-installed workflows can be fed experimental (arbitrary drake-packages/..., but experimental is often the useful case) packages, likewise for Python + wheels. The parameters for this are currently worded in a platform-specific way, but we don't have production packaging on Tahoe (and only publish a single macOS tgz), so there's a gap there. I can push fixes, but just wanted to flag this.

(BTW, "Update dependency macos to v26" is a really odd way to phrase that, but 🤷. I might like to revise the commit message should we move forward.)
