docs: all 3 OS chips live; drop platform explainer, keep Fedora caveat

Windows/macOS/Linux chips now all use .os-chip live (brightest accent).
Status labels: Windows=live, macOS=easiest, Linux=easiest.
Removed the pay-is-identical/connect-differs explainer paragraph; the
lead plat-note is now just the Fedora SELinux exception.
