Change build to hatchling

Hey guys, this has solved the editable install problems where the package is not properly parsed by static tools like vscode (i.e. the methods and package are not click reachable)

OK, I will merge this. Sam is away and I guess he won't have time to check this on a while. We can then test if no error comes out of this for longer and revert if necessary.
