Installation issues 2024-2025

This issues aims to document common instillation issues with the students from the 2024-2025 cohort.

Common issues include:

rmarkdown PDF-generation
rmarkdown HTML-generation

The nbconvert issue is that the package has a different name for some students, see #235

The rmarkdown issues are generally only apparent when using rmarkdown from the terminal. This is because the package relies on RStudio to set an environmental to find pandoc (which seems like terrible practice to me personally, but maybe there is a reason for it). We try to find this manually but it is hard to account for all possible paths. Hopefully this will be fixed by fully moving to quarto next year.
