build(deps): bump uuid and matrix-js-sdk

Removes [uuid](https://github.com/uuidjs/uuid). It's no longer used after updating ancestor dependency [matrix-js-sdk](https://github.com/matrix-org/matrix-js-sdk). These dependencies need to be updated together.

Updates `matrix-js-sdk` from 24.1.0 to 41.6.0-rc.0
