build(deps): bump uuid and cypress in /apps/e2e

Removes [uuid](https://github.com/uuidjs/uuid). It's no longer used after updating ancestor dependency [cypress](https://github.com/cypress-io/cypress). These dependencies need to be updated together.

Updates `cypress` from 13.2.0 to 15.16.0
