Split up 1.21.4 & 1.21.5 as overlays
Put the 1.21.5→ 1.21.4 items in an overlay, and created copies of items hijacks that don't use custom_name, only custom_model_data. Set up dennis painting, tested on 1.21.4 & 51 parent ef502a9 commit be7c719
