Overview
Updates backend/packages.json so QA/deploy pipelines use the released Virto Commerce platform 3.1042.0 instead of the previous PR prerelease image tag (3.1042.0-pr-3068-…).

PlatformVersion and PlatformImageTag both change to 3.1042.0; module entries and sources are unchanged aside from minor JSON formatting.
