docs: update binding docs for the unified two-way _bind

The model rework made binding two-way for every bound attribute (all data is
written to one root model, only the edited delta is transported back), so the
old one-way/two-way split and the _bind_edit method are obsolete.

- cookbook/model/binding.md: reframe around a single two-way client->_bind
  (display via a read-only control, edit via an editable one); note _bind_edit
  is now an obsolete alias; drop the removed /XX/ model-path prefix from the
  structure examples.
- configuration/performance.md: the _bind vs _bind_edit data-transfer advice is
  obsolete - only edited paths are shipped back (delta).
- Sweep _bind_edit( -> _bind( across all example snippets (102 calls in 33
  files); no example used the custom_*_back mappers that only _bind_edit exposes.
