docs: regenerate demo GIFs and screenshots with polished UI

Record automated demo GIFs using Playwright + ffmpeg for the updated
UI. Add 6 feature GIFs (walkthrough, decision tree, timeline, search,
analytics, comparison) and 4 new/updated screenshots.
