test: rewrite validation tests using full ApisixConsumer CRD schema

Replace the previous approach of extracting jwtAuth.value subschema with a consumerSchemaValidator that loads and validates against the complete ApisixConsumer CRD schema. Test inputs use Go structs (ApisixConsumer) marshaled to JSON, matching what Kubernetes actually receives.
