Adds DeepSeek as an OpenAI-compatible built-in model catalog and updates the YAML-driven ModelRegistry tests to account for the new provider and its env-var-based enablement.
Changes:
- Added a new
openai_compatiblecatalog (deepseek.yaml) describing DeepSeek endpoint metadata and two models. - Extended the YAML catalog snapshot test expectations to include
openai_compatible→ DeepSeek model IDs. - Made tests deterministic by clearing
DEEPSEEK_API_KEYvia an autouse fixture and explicitly setting it only where needed.
