test: increase coverage for v3 Channels model to 100%

Increases test coverage for src/models/v3/channels.ts from 25% to 100%.

Changes:

• Refactored test/models/v3/channels.spec.ts to properly instantiate the Channels collection using an Array (fixing the TypeError).
• Added tests for get, has, filterBySend, and filterByReceive.
• Mocked dependencies to ensure unit isolation.
