chore(deps): bump ts-deepmerge, @copilotkit/react-core and @copilotkit/react-ui (#99)

Removes [ts-deepmerge](https://github.com/voodoocreation/ts-deepmerge). It's no longer used after updating ancestor dependencies [ts-deepmerge](https://github.com/voodoocreation/ts-deepmerge), [@copilotkit/react-core](https://github.com/CopilotKit/CopilotKit) and [@copilotkit/react-ui](https://github.com/CopilotKit/CopilotKit). These dependencies need to be updated together.


Removes `ts-deepmerge`

Updates `@copilotkit/react-core` from 1.54.1 to 1.61.0
