Use standalone wiremock (#6689)

The standalone version of wiremock shades all of its dependencies so
they  don't conflict with dependencies that the SDK shares with it. In
particular, this solves a recent compatibility issue with the differing
Apache 5.x httpclient dependencies causing initialization issues with
wiremock.
