docs: align roadmap with current UI modules

Summary

• update milestone 0 mock provider task to call out the current pages under custom/ui/pages/
• rewrite milestone 1 to list the Rooms, CCTV, Weather, Media, and Settings page scaffolding with their present completion state
• replace later milestones with data-plumbing and MQTT integration work that advances the implemented screens instead of the old Home/Control Center items
