chore(release): esplora-client `v0.12.2`

It's a tracking issue for issues and PRs that should land in the next v0.12.2 release of esplora-client.

I personally think we can have this as a patch release with all the current non-breaking changes, and then a new v0.13.0 release with upcoming API breaking changes and the MSRV bump to 1.75.0.
