Migrate away from pkg_resources

Describe the bug

Brainflow uses pkg_resources, a deprecated API.

Expected behavior

pkg_resources is migrated away from and replaced with importlib.

FIX SUBMITTED: #792

COMPLETELY RESOLVES the pkg_resources → importlib.resources migration:

Fixed ALL 6 files:
emulator/brainflow_emulator/ → cyton_windows.py, freeeeg32_windows.py, knightboard_windows.py
python_package/brainflow/ → board_shim.py, data_filter.py, ml_model.py

Tested on:

• Python 3.11+ → Zero warnings
• Python <3.9 → pkg_resources fallback works
• NixOS → Modern resource loading

After: Clean EEG logs
